Fried tofu with zucchini and mushrooms

I think I've finally perfected my tofu. Today I marinated it with some brag's liquid amino and a little cooking wine. Then I fried it with a little olive oil. I kept it on medium to low until all the liquid was soaked in/evaporated. Then I turned it up to high and let it get crispy.

I baked the zucchini with fresh mushrooms and a little olive oil. I find zucchini bakes better than frying, when the zucchini tends to break down or mush. Plus, my frying pan was busy with the tofu.

It's pretty low sodium and tasty. At the end I sprinkled it with garlic powder and a little salt. Yum!
